Crafted Royal Biryani Masala (40g)

🍽️ Bengali-Style All-Purpose Biryani (Serves 4)

Fragrant, comforting and full of Bengali flavour—perfect with chicken, mutton, beef, egg or vegetables.

🧂 You’ll Need:

Main Ingredients

• 500g chicken/mutton/beef OR 4 boiled eggs OR 3 cups mixed vegetables

• 2 cups basmati rice (soaked 30 mins)

• 2 medium potatoes (peeled, halved & lightly fried)

• 2 medium onions, thinly sliced

• ¾ cup plain yogurt

• 2 tbsp Crafted Biryani Masala

• 1 tbsp ginger-garlic paste

• 1 tsp salt (or to taste)

• Juice of ½ lemon

• ¼ cup oil or ghee

• 2 tbsp milk + a pinch saffron or turmeric

• Whole spices: 1 bay leaf, 2 cardamoms, 4 cloves, 1 cinnamon stick

• Chopped fresh mint & coriander, 8 to 10 green chillies

• Few drops kewra water (optional)

👩‍🍳 Method:

1. Marinate chosen protein or veg with yogurt, Biryani Masala, ginger-garlic paste, salt, and lemon juice. Rest 1–2 hrs (overnight for mutton and beef).

2. Cook protein until tender (meat); eggs peeled; vegetables lightly sautéed.

3. Fry onions in oil/ghee till golden. Reserve half for layering.

4. Boil rice in salted water with whole spices. Drain at 70% cooked.

5. In a heavy pot, layer cooked meat/veg, fried potatoes, and rice.
   Top with fried onions, herbs, saffron milk, and kewra water.

6. Seal & cook (dum) on low heat for 25–30 mins. Let rest before serving.

Best enjoyed with raita, salad or a boiled egg.
